  侗乡腌鱼,是黔东南侗乡农民以稻田鲤鱼作为原料,经精制加工的传统咸鱼食品,能长期贮存食用。它用鲜鱼盐腌,用腌汁拌糯米饭调制成腌精,填到鱼腹中去,或者用它涂抹鱼身,然后放入密封容器内100天即是上好的佳品,无论是生煎炒煮,尝起来浓香清爽,鲜嫩可口,其味妙不可言。

  Pickled Fish of the Dong People

  The Pickled Fish of Dong People is a kind of refined traditional pickled fish for long-term storage, featuring paddy-field carp as the main ingredient. It is made by peasants of the Dong villages in Southeastern Guizhou. It is pickled with fresh fish: the pickle material, a mixture of pickling juice and glutinous rice, is filled into the abdomen of the fish, or the juice is applied on the fish surface, and then the fish is placed into a sealed container for 100 days before the food is ready. Either by frying, or poaching, it provides an aromatic and fresh taste beyond description.
