　　山西老陈醋是山西省的汉族传统名产，属于中国四大名醋之一，它的生产至今已有3000余年的历史。山西老陈醋以色、香、醇、浓、酸五大特征著称于世，含有丰富的氨基酸、糖类、维生素和盐等。它以高粱、麸皮、谷糠和水为主要原料，自2004年8月9日起对山西老陈醋实施原产地域保护。

　　Shanxi Mature Vinegar is the traditional and famous product of the Han people and one of China's four most famous vinegars, with production dating back more than 3,000 years. Shanxi time-honored vinegar is world renowned for the five characteristics of color, aroma, mellow taste, concentration, and sourness. It is rich in amino acids, sugars, vitamins and salts with sorghum, wheat bran, rice bran and water as the main raw ingredients. Since August 9, 2004, the government has begun to implement the protection of place of origin of Shanxi time-honored vinegar.
